We're only a few days into summer and the heat is already brutal. There are only two things to do when it's this hot: complain about how hot it is and eat something icy cold. And for icy cold refreshment, nothing beats sorbet. A few weeks ago we went out for ice cream on a hot day and everybody else got ice cream but I got sorbet, which because it has no milk is just so much more pleasant when it's hot out. They were all totally jealous. Make everyone totally jealous of you with these 7 fantastic sorbet recipes.
Coconut Sorbet 1. Coconut Sorbet
Transform a can of coconut milk into a creamy and delicious vegan dessert!
Make coconut sorbet:
Ingredients:
3/4 cup sugar (add more if there are texture problems)
2 cans light coconut milk
1/2 teaspoon crushed cardamon pods
1 1/2 cups shredded unsweetened coconut
4 cloves
2 tablespoons vanilla extract
Directions: Heat the ingredients in a medium saucepan until the sugar dissolves. Put the spices in a tea ball and hang from the side of the pan while you heat the coconut milk. Remove from heat and stir in the vanilla extract. Chill the mixture, including tea ball, fully-overnight if you can. Process with your ice cream maker, and then freeze the sorbet for at least three hours. Homemade sorbet has the best texture in the first few days after it's made, so try and enjoy it right away.
