Thanksgiving Holiday Dairy Favorites
November graces us with the anticipated Thanksgiving holiday where we gratefully count our blessings and enjoy an abundance of traditional food with our loved ones. The display of turkey, stuffing, pumpkin pie, mashed potatoes, cranberries and other Thanksgiving sides is quite the sight to see spread across the dinner table. In celebration of Thanksgiving, enjoy some dairy-friendly holiday recipes that the whole family will love!
Spiced Pumpkin Pie Rice Pudding (recipe and picture by Jenny, picky-palate.com)
3 Cups cooked jasmine rice
2 ½ Cups reduced-fat milk
¾ Cup prepared pumpkin puree, such as Libby's
½ Cup granulated sugar
¼ Cup brown sugar
1 teaspoon cinnamon
1/8 teaspoon kosher salt
3 inch cinnamon stick
1 fresh vanilla bean
1. Place cooked rice, milk, pumpkin, sugar, brown sugar, cinnamon, salt and cinnamon stick into a medium dutch oven or heavy bottom pan over medium low heat. Stir to combine. Split vanilla bean in half length wise and scrape out the seeds with the back of the knife. Add seeds and split bean into rice mixture; stir to combine. Let rice simmer for 15-20 minutes or until thick and creamy. Before serving discard vanilla bean halves and cinnamon stick. Sprinkle tops of each bowl with brown sugar if desired.

Creamy Roasted Garlic Mashed Potatoes (recipe and picture by Jenny, picky-palate.com)
1 bulb garlic (about 12 cloves)
2 ½ lbs russet potatoes
½ Cup reduced-fat milk
4 oz softened cream cheese
1 Cup sour cream
½ stick butter
2 teaspoons salt
1 teaspoon fresh ground black pepper
1. Preheat oven to 350 degrees F. Place bulb of garlic with skins on, wrap lightly in tin foil and bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in a bowl and mash with a fork until completely mashed. Set aside.
2. Peel and cube potatoes and boil for 15-18 minutes or until fork tender. Drain and transfer to a stand or electric mixer. Mix potatoes on low until combined. Add milk, cream cheese, sour cream, butter, salt, pepper and mashed roasted garlic. Top with a pad of butter and/or your favorite gravy. Enjoy!
