Q: In the article you mention not to use splenda as straight substitute for cooking, but what about as a sweetener? I use splenda in plain yogurt or oatmeal sometimes instead of sugar b/c I have naturally high sugar and still enjoy a slightly sweeter taste. Is this acceptable? Thanks! fruitlover

I finally did another big grocery shop and feel so good about having healthy food in the house! I went to the store with a plan. Dinners this week are as follows: Beef Stroganoff, Roasted Chicken with Stuffing, Green Beans & Acorn Squash, Pork Loin in the Slow Cooker with Sweet Potatoes and Asparagus, Steak on the Grill with Twice Baked Potatoes and Spinach. I also needed snacks, breakfast and lunch items. I was able to find most of the things I needed. I'll need to grab spinach later this week as they were all out. Mike was with me so I catered to a couple of his requests and we splurged on filet mignon for our steak on the grill since we are happy to finally be eating dinner together again! I would normally buy sirloin, flank or strip steaks but I had my red meat lover with me and he chose those -- he needs it though to replenish the fuels he's burned these last few weeks! I'll try to post recipes as I cook so that you can see how I used the ingredients I bought. Read More »

Q: I was wondering if its possible to eat too much peanut butter, and how much is a good amount? I love PB and I have it everyday sometimes twice a day. I'm someone who has to be aware of my weight and i don't want to gain weight. I don't know if it helps but i do eat the smuckers all natural peanut butter. vintage10

Q: I would love to know what to look for when buying cereal and granola bars. I always look on the nutrition label to see if it has a high percentage of vitamins and minerals. I had to dine solo tonight so I used my Griddler again to make a meal big enough for just one. My "cooking" got started later than I had hoped so instead of roasting red potatoes in the oven I switched my starch to long grain wild rice instead. I had two options, microwave quick cook (done in 90 seconds) or stove top quick cook (done in 5 minutes) -- I chose the stove top option and figured I would save the 90 second pouch for a night where I am really behind schedule. Today I am going to go to mom's group because I can only go a couple more times before the course I am teaching starts since it will also be on Tuesday mornings. I am going to try to find another group to go to because I do enjoy learning from the instructor and the other moms. It's October so of course Halloween is near but if you've been to the grocery store anytime since August you have probably noticed that the candy has been displayed for sale for months now! My daily American Dietetic Association email has had several articles recently about how to enjoy Halloween without going overboard and there are many suggestions given for candy alternatives. I am a little torn here...because being a dietitian I know you should avoid buying and having the candy in your house too far in advance (that's just too much of a daily temptation) but at the same time I think it's fine for kids to enjoy a little candy on the holiday rather than a pack of raisins or nuts (sorry but that's no treat).
