Avocado-Black Bean Dip
Avocado-Black Bean Dip
Ingredients
1 (15-ounce) can black beans, drained and rinsed
1 cup frozen whole-kernel corn, thawed, or fresh corn kernels (1 ear)
1 (14.4-ounce) can fire-roasted diced tomatoes, with juice
2 garlic cloves, minced
1/4 cup packed fresh cilantro, chopped
3 tablespoons fresh lime juice
2 tablespoons avocado oil or light olive oil
1 teaspoon ground cumin
1 teaspoon minced canned chipotles in adobo sauce
1/2 teaspoon salt
2 avocados, diced
Tortilla chips
Preparation
Combine first 10 ingredients, stirring until well blended. Fold in avocado, and serve with tortilla chips.

1/2 cup lightly packed fresh parsley leaves

Ingredients
1 large egg, lightly beaten
1/3 cup mayonnaise
2 teaspoons Dijon mustard

1/8 teaspoon smoked paprika
1 pound lump crab, drained and picked
1 1/2 cups panko, divided
2 tablespoons melted butter

1 cup chopped mango
1 cup chopped pineapple
1 roasted red bell pepper, chopped
1/4 red onion, finely chopped
1 garlic clove, minced
1/2 jalapeño pepper, seeded and minced
1/4 cup loosely packed fresh cilantro, chopped
1/2 teaspoon salt
1/2 to 1 teaspoon lime zest
1 tablespoon fresh lime juice
Preparation
Combine all Mango-Pineapple Salsa ingredients in a bowl; cover and chill until ready to serve.

Ingredients
1 pound boneless fish fillets, cut into bite-size pieces
1 pound peeled and deveined shrimp
1 yellow bell pepper, cut into pieces
1 orange bell pepper, cut into piece
1 red onion, cut into wedges
1 pint cherry tomatoes

Salt
Freshly ground black pepper
Guava BBQ Sauce
1 tablespoon coconut oil or vegetable oil
1 small yellow onion, finely chopped
2 garlic cloves, minced
1/2 cup guava nectar
8 ounces guava paste or jelly
1/4 cup molasses
1/3 cup cider vinegar
2 tablespoons tomato paste
1 teaspoon ground allspice
1 teaspoon curry powder
1/4 teaspoon salt
