    • Blueberry Quinoa Breakfast Bakes


      Good morning everyone!! I am trying to make new recipes instead of going back to my tried and true favorites and this particular one has been bookmarked for a while now. I bought some whole grain quinoa at Costco about a month ago but haven't made it yet because I am a little wary. I don't think I have ever had it before but I have seen it in dozens of recipes.

      This breakfast recipe from Healthful Pursuit looks and sounds amazing. I had to improvise because I don't have the appropriate bakeware to so I made mine in the oven as mini bakes instead of in the mircowave as one large bake. I just used a muffin tin. I really need to get to Walmart to buy some specific cooking stuff.

      Ingredients:

      • 1/4 cup whole grain uncooked quinoa
      • 1 tbsp chia seeds
      • 1 tbsp flaxseed
      • 2 tbsp applesauce
      • 1 scoop protein powder (of course)
      • 1/4 cup almond milk cinnamon to taste

      Today breakfast was a smorgasbord of food because I really didn't feel like anything. I had one protein bar (recipe below), greek yogurt with ground flaxseed and berries and a hard boiled egg.

      I found this recipe on Jamie Eason's Facebook page and I have been wanting to make it for a while because everyone raves about it. The problem is that unless you have kids (and I do not) then you don't normally have baby food on hand. So I went to the store last night for a few other things and remembered (finally!) to get baby food. I got a different flavor than her original (carrot) because I saw the mixed berries and banana and it sounded like something that would be easier to get the fatkid to eat than carrots.

      Breakfast was protein pancakes with blueberries.

      1 scoop pp splash vanilla extract cinnamon 2 tbsp or so of almond milk 1 tbsp blueberries

      After the gym I had an awesome almond butter banana smoothie. No picture.
      Dinner was a chicken "casserole" I read a few different variations of this but I can't remember where. I'm sorry :/ but it's great because you can really modify with whatever veggies you want and use mozzarella cheese or parmesan, we just had feta in the house.



      2 cooked chicken breasts cubed - ours was grilled from the weekend 1/2 cup non-fat greek yogurt
      1 tbsp extra virgin olive oil
      2 tbsp Lizzie's Kitchen (below)
      few dashes of garlic powder 4 oz feta cheese 1 cup chopped spinach 1/2 onion diced
      6 large mushrooms chopped
      3 celery stalks chopped
      2 large carrots peeled and chopped
      5 asparagus chopped
      Directions:
      I cooked the carrots and asparagus in a skillet for about 5 minutes to soften them up.

    • Quick Healthy Protein Pancakes

      Day 27: Lifting this afternoon - I slept in past my morning cardio - oops.

      So we all know that I have been doing protein bakes to make sure I get my protein in the morning but the fatkid doesn't like oatmeal (weirdo) so he just does cereal with fruit in the am. I have been working on him getting his protein in the morning so today I decided to make him protein pancakes. I adapted this recipe from the fitnessista.


      Ingredients:
      1 scoop Syntha-6 vanilla protein - this is a LARGE scoop and the man's protein powder
      2 tbsp whole wheat flour
      1 tbsp ground flaxseed
      3/4 tsp baking powder
      3 tsp cinnamon
      sprinkle nutmeg

      1 egg
      1/4 cup unflavored almond milk

      3 tbsp frozen berries - he asked for more next time.

      Directions:
      Mix dry ingredients in a bowl.
      Whisk egg and milk together.
      Mix wet mixture into dry and then add in frozen berries.
      Cook in a pan between medium and low until middle is firm enough to flip.
      Cook other side for a minute or two until light brown.

    • Berry Banana Protein Bake

      So I wanted to try the banana bake a little differently as I have a bag of frozen berries in the fridge and I am getting sick of just have my protein with water on my way home from the gym in the pm.
      This is my new snack for immediately after lifting. I cut it in four pieces and each piece has apx:
      400 Calories36(g) Protein 12(g) Sugar 48(g) Carbs7(g) Fat
      Ingredients:
      2 cups of rolled oats 4 scoops of vanilla whey protein powder 2 tbs ground flaxseed 1 tbs chia seed 1 tsp bee pollen 1 tsp baking powder 2 tbsp cinnamon sprinkle nutmeg


      1 egg
      1.5 cups fat free milk 1 tsp coconut oil 1 mashed banana 1/2 cup to 1 cup frozen mixed berries

      1 sliced banana 1/2 cup ground walnuts

      Directions:
      Line the bottom of a round baking pan with the sliced banana. I did not spray mine this time because my pan is non-stick - just found this out...     • Healthy Apple Oatmeal Bake

      Happy Monday!!

      So since I loved the banana oatmeal bake I made last week I decided to try another one. A friend of mine suggested apple and I thought that sounded delicious - lucky for me, it was!!
      Ingredients:
      2 cups rolled oats
      1/4 tsp salt1 tsp baking soda or powder - which i forgot...so mine didn't really rise..oops!2 tbs ground flaxseed1 tbs chia seeds1 tbs whole flax seed2 tbs cinnamon
      2 apples - one diced and one finely sliced
      1 egg1 cup fat free milk1/2 cup fat free greek yogurt

      Directions: 1. Mix dry ingredients together. 2. Slice apple and layer into a greased pie pan (about half the apple, reserve other half) - I use olive oil spray.
      3. Place pan with bottom layer of apples in the oven and pre-heat to 350. This crisped the apples just a little.
      4. Mix together wet ingredients - including diced apple.
      5. Pour mixture into the pan and top with remaining sliced apple.
      6. Bake at 35 for 30-35 minutes.

    • Protein Oatmeal Banana Bake

      I eat oatmeal with vanilla protein powder basically every day and I am getting slightly sick of it....plus I have been running slightly late recently. My point it that I saw this oatmeal bake on a bicycle built for Two and also on Kath Eats Real Food and wanted to try it. The only problem I saw was that the bake didn't have my morning protein in it. Soo...I modified it a little and this is what I came up with:


      Clearly I HAD to use these today...



      Ingredients: 2 cups of rolled oats4 scoops of vanilla whey protein powder 2 tbs ground flaxseed 1 tbs whole flaxseed 1 tbs chia seed 1 tsp baking soda - was supposed to be power - oops! 1/4 tsp salt 1 tsp cinnamon

      1 egg 1.5 cups fat free milk 1 mashed banana

      4 sliced bananas


      Directions:
      Mix together wet ingredients - except sliced banana.
      Mix together dry ingredients.
      Line the bottom of a round baking pan with the sliced banana - this took me about 3 of the 4.

    • Healthy Orange-Cranberry Muffins - with a twist!


      I have a ton of citrus in my house at the moment - orange and lemons galore so I wanted to use them to make something. Adapting this clean eating lemon muffins from The Gracious Pantry I make some lemony orange cranberry muffins. They turned out great but a little sweet for my taste. For someone who loves candy I am not big on sweet baked goods - I think next time I will reduce the honey. Also because I made mini muffins I think I will add more cranberries next time so there is more in each muffin.


      Ingredients
      1 cup whole wheat flour
      1 cup all purpose flour2 tsp. baking soda
      1 egg
      1/2 cup honey
      1/4 cup olive oil
      3/4 cup non-fat milk
      4 tsp. lemon extract
      zest of one whole lemon
      zest of two whole oranges1/2 cup unsweetened apple sauce
      1/2 cup cranberries


      Directions
      Mix together flours and baking soda and set aside.
      Mix together all wet ingredients.
      Slowly add flour to wet mixture.

    • Classic Banana Bread on a Lazy Sunday

      So this weekend was a great one spent with my fatkid and his mother who was in town visiting us for the first time. She got to see the house, we went to a baseball game and spent time with out friends. On Sunday while we were lazing around recovering from Friday and Saturday John asked me for the 10th time to make him "regular" banana bread - translation: with sugar and butter. So I gave in and looked up some recipes and adapted from these two: basic banana bread and classic banana bread. It turned out delicious but because it is not super healthy I probably won't be making it on a regular basis :) enjoy!


      Ingredients:
      2 cups all purpose flour
      1 tsp baking soda
      1/4 tsp salt
      2 tsp cinnamon
      sprinkle nutmeg
      2 eggs
      1 tbsp vanilla
      1/2 cup butter melted
      2 cups banana mashed
      1/2 cup dark brown sugar
      1/2 cup granulated sugar

      Directions:

    • Quick, Healthy, Slow Cooker Chicken

      This is an easy and quick (prep) dish for me to make overnight or while I'm gone all day. I use the chicken and onions to make tacos with pita flaxseed flatbread while the fatkid eats his plain.

      Pita flaxseed flatbread with chicken and onion, avocado, lettuce, cheese, black beans and Pace** Picante Sauce - yummy!!


      Ingredients:

      • 1-2 Onions chopped (depending on how much you want to eat with your chicken)
      • 3-4 Chicken breasts, plain, boneless, skinless, frozen (I buy the big bags from Costco)
      • 1 Apple diced in about 1/2 inch squares (peel on)
      • 3 Garlic cloves peeled and smashed
      • 1-2 Tbsp of basil
      • 1/2 Cup low sodium chicken broth
      • 1/2 Cup water
      • Salt and Pepper - your preference on how much.


      Directions:
      • Line the bottom of the crock pot with the onion and apple.
      • Places the chicken breasts in (try not to lay them on top of each other).
