Hot summer days have you avoiding the kitchen like your scheduled teeth cleaning?
Here's a way to avoid cooking in the kitchen when summer laziness hits an all-time high.
Shine Supper Club challenged us to come up with our best recipes for no-cook dinners, and I'm delivering my crock-pot version of chicken tacos.
All you need is three main ingredients for the filling, and minimal kitchen prep to get your summer-time tacos started.
Crock-pot Chicken Tacos
2 lbs. chicken (about 2 breasts)
1 packet taco seasoning mix
1 small jar salsa (or less to taste)
Place chicken into crock-pot, sprinkle with taco seasoning mix, and add 1/2 - 1 can prepared salsa.
Chicken taco filling prepared in crock pot.Cover with lid, and put on high for 4 hours.
When chicken is fully cooked, use two forks to shred chicken.
Mix well into surrounding juices.
Add water if needed.
Slice lettuce thin, and place in bowl.
Assemble filling in taco shells with lettuce and shredded cheese. Add any other toppings of your choice.

My guests often ask what my secret is for making the perfect BBQ meat. It's a combination of "secrets" that have been picked up over the years, and I will now share them with you.
For maximum flavor, I marinate the meat overnight in a sealed plastic bag. Be sure to remove the bag about a half hour before grilling, so that it's room temperature. The amount of ingredients can vary, so feel free to put more or less of anything you choose.
The top coating after grilling should be basted on with a brush just before removing it from the grill, so that it doesn't burn on. It doesn't matter what meat you marinate and baste, the flavor will still be phenomenal!
1 cup soy sauce
2 cloves garlic (minced)
1 tsp oregano
Grill meat to desired perfect, then use basting brush to add:
1 cup desired BBQ sauce (I prefer Hickory or Whiskey flavored)
1/2 cup orange marmalade
2 tablespoons soy sauce
Blend together in small bowl and have ready to apply just before removing

When summertime heats up the kitchen more than your stove, it helps to prepare foods that don't add to the temperature. Whether you're planning on hosting a party, or just want to have a rounded meal without cooking, a 7-layer dip is easy, fun, and tastes delicious!
Here's my version of the recipe that can be thrown together in around 10 minutes, and tastes so good, it's hard to stop eating once you start. You can even add your own touch with olives or other toppings you prefer.
Easy, Breezy 7-Layer Dip Recipe
1 casserole dish (around 8" X 10")
1 can re-fried beans
1 tub sour cream
1 package taco seasoning mix
1 package ready-made guacamole dip
1 small jar salsa of choice
1 cup shredded cheddar cheese
2 medium sized tomatoes cubed
2-4 green onions cut 1/4 inch (greens included)
Mix re-fried beans with HALF of the taco seasoning package in small bowl, and layer flat into casserole dish. Mix other HALF of taco seasoning into tub of sour cream, and layer on top of re-fried

Thanks to my Hungarian roots, I had the privilege of learning authentic recipes at home, coming from first generation American parents. Although I would have preferred good old American foods like pizza and burgers to all the ethnic foods we ate at home, I now realize how lucky I was to be raised in a home where flavors and spices were provided daily.
My parents taught me the basic recipe for Hungarian Goulash, although I've tweaked the ingredients to better fit my own tastes. To this day, I claim that my version of the staple Hungarian dish is the best you'll ever try (and I'm a picky eater). The best version would be to prepare it in a cauldron over a wood-burning fire, and if you have the right company, you'll be chanting "Attila!" So if you are expecting guests, or want someone to fall in love with you, this recipe will be a good choice.
2 lbs. lean beef cut into 3/4 inch cubes
1 medium onion chopped (about 1 cup)

Just when I dared to dip my toes back into the dating pool of "online dating," I made a self-discovery: I was determined to do it right this time. I'd been on 'Plenty of F**ks', (as a funny character named it on an anonymous forum [thanks for that, F_U_Duck]), and gave up on the whole "online dating" thing over a year ago.
In retrospect, I think I just wasn't ready to start dating again. But I've been "working out" emotionally, and read lots of material since then, and feel confident about going in for a second round. Plus, my brain is super muscular by now. *flexes muscles in brain*

So what is my vast knowledge in online dating? Well not much, other than how to create the best profile. It's been a hearty two years of self-discovery since my marriage ended. I've spent countless hours reading articles about dating, books written by psychologists about relationships, and writing about my own experiences.
