True romance is never easy.

If you could spend a few hours rewinding my life (not that you would ever want to), you could chomp away on your bucket of buttery popcorn and tilt back your box of Goobers until the cardboard edge became damp with your lip puckers, and you could watch me make a perfect mess of a lot of romance. You could laugh and frown at me ruining more things heartfelt and lovely than you would probably ever be able to stomach.

Over the course of my love affairs scattered across the last two decades, I have managed to screw up (amongst other things): picnics in the park, late Sunday mornings in bed, walks down streets in a bevvy of world-class cities on several continents, impossibly sensual outdoor kisses, train ride cuddles, motel room snuggles, Christmas Eves, Christmas mornings, tender moments eating ice cream on benches, dinners in dimly-lit restaurants… Okay, I've pretty much screwed it all up at one point or another.

Nutella Stuffed Strawberry French ToastOne of my favorite Valentine's Day traditions is breakfast in bed. Admittedly, it hasn't be a regular tradition since my daughter was born, but we still try to do it when I can. We've become somewhat accustomed to bedtime breakfasts and developed a few favorite things. Here are the dishes I swear are PERFECT for breakfast in bed. Make them in the morning, load up a tray with tons of food and a flower and head upstairs for a wonderfully romantic breakfast!

1. Nutella Stuffed Strawberry French Toast
There is nothing better than adding Nutella to an already gorgeous french toast breakfast. Who wouldn't love to wake up to this?!

Ingredients:
sliced bread
Nutella
2 eggs
1/2 cup milk, half and half or cream
1/4 teaspoon vanilla
1 tablespoon agave or honey
olive oil or butter for cooking
fresh strawberries for garnish

For syrup:
1 cup fresh or frozen strawberries
1/4 cup maple syrup, I used grade B

Directions:

ChilaquilesAre you a chilaquiles fanatic? Mmmmmm, I am. I think this delicious dish could be eaten anytime of the day, even though most people enjoy it as a breakfast meal. Fried pieces of crisp corn tortilla stewed in a simmering red chile that soften the tortilla and then smothered in cheese. It holds all the flavors of an enchilada but is more bite size. Serve it with eggs, sour cream and avocado and you will be making this dish more than you would like to admit.


Ingredients:
10 - corn tortillas (cut into triangle pieces)
1 1/2 - cups vegetable oil 1/3 - cup onion (diced)
1 - cup red chile (click here for a delicious red chile recipe or buy canned red enchilada sauce)
1/4 - cup sliced black olives 2 - cups grated jack or pepper jack cheese a pinch of oregano
1/2 - cup crumbled queso fresco salt to taste

1. Cut tortilla into triangles pieces.
2. In a large frying pan over a medium flame add vegetable oil and allow it to get hot.
