Harvest Pizza
Ingredients
1 lb. pizza crust dough
1 cup mashed sweet potatoes or leftover sweet potato casserole (without toppings)
1 cup shredded roasted turkey
1 cup shredded spinach
1/2 cup sliced shitake mushrooms
1/2 cup sliced red onion
1 1/2 cups (6 oz.) shredded Havarti cheese
1 tsp. freshly ground Italian seasoning
Preparation
Preheat oven to 450°. Roll pizza crust dough into a 12-inch circle. Transfer to a baking sheet sprinkled with cornmeal. Spread mashed sweet potatoes over dough. Top with turkey, spinach, sliced shitake mushrooms, sliced red onion, shredded Havarti cheese, and freshly ground Italian seasoning. Bake directly on oven rack 18 minutes or until edges are browned.

Hot Cider Nog
Whisk together 2 cups half-and-half, 1 cup each milk and apple cider, 2 large eggs, 1/2 cup sugar, 1/4 tsp. ground cinnamon, and 1/8 tsp. each salt and ground nutmeg in a heavy saucepan. Cook over medium-low heat, whisking constantly, 15 to 20 minutes or until mixture thickens and coats a spoon. Remove from heat; stir in 1/2 cup bourbon, if desired. Top each serving with sweetened whipped cream. Garnish with cinnamon sticks, ground cinnamon, and apple slices, if desired. Makes: 5 1/2 cups

Pecan Cheesecake Pie
Ingredients
1/2 (15-oz.) package refrigerated piecrusts
1 (8-oz.) package cream cheese, softened
4 large eggs, divided
3/4 cup sugar, divided
2 tsp. vanilla extract, divided
1/4 tsp. salt
1 1/4 cups chopped pecans
1 cup light corn syrup
Preparation
Fit piecrust into a 9-inch pie plate according to package directions. Fold edges under, and crimp.
Beat cream cheese, 1 egg, 1/2 cup sugar, 1 tsp. vanilla, and salt at medium speed with an electric mixer until smooth. Pour cream cheese mixture into piecrust; sprinkle evenly with chopped pecans.
Whisk together corn syrup and remaining 3 eggs, 1/4 cup sugar, and 1 tsp. vanilla; pour mixture over pecans. Place pie on a baking sheet.

Balsamic Root Vegetables
Ingredients
1 1/2 lb. sweet potatoes
1 lb. parsnips
1 lb. carrots
2 large red onions, coarsely chopped
3/4 cup sweetened dried cranberries
1 Tbsp. light brown sugar
3 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 tsp. salt
1/2 tsp. freshly ground pepper
1/3 cup chopped fresh flat-leaf parsley
Preparation
Peel first 3 ingredients, and cut into 1 1/2-inch pieces. Combine parsnips, carrots, onions, and cranberries in a lightly greased 6-qt. slow cooker; layer sweet potatoes over top.
Whisk together sugar and next 4 ingredients in a small bowl; pour over vegetable mixture. (Do not stir.)
Cover and cook on high 4 to 5 hours or until vegetables are tender. Toss with parsley just before serving.
