      store-bought chicken salad
      Mango slices

      Blackberries

      Preparation
      1.
      Crisp pastry shells according to package directions; cool. Spoon chicken salad into cooled shells. Gently place 1 fresh mango sliver onto chicken salad in each shell, shaping mango sliver to resemble a flower. Place 1 small piece of blackberry and 1 small basil sprig next to each mango slice.

      Make these darling tea sandwiches at your next shower or ladies luncheon.

      Choose your favorite fillings, and prepare up to a day ahead. Plan on 1⁄4 cup filling for each whole sandwich.

      Freeze bread slices until firm. (This makes it easier to trim and cut the sandwiches.)
      Trim crusts from bread with a long serrated knife after sandwiches are filled; cut each sandwich into 4 triangles.

      Make sandwiches up to 4 hours ahead. Place in an airtight container, cover loosely with wax paper and a damp paper towel, cover, and refrigerate.


      Ham Salad

      Process 1 lb. chopped baked ham, in batches, in a food processor until coarsely ground, stopping to scrape down sides as needed. Place ground ham in a bowl, and stir in 3 hard-cooked eggs, peeled and grated; 2⁄3 cup mayonnaise; and 1⁄2 cup finely chopped sweet-hot pickled okra. Add salt and pepper to taste.       Makes: 8 servings Hands-On Time: 20 min. Total Time: 1 hr., including pimiento cheese

      Ingredients
      Miss Mattie's Southern Pimiento Cheese
      1/3 cup butter, softened
      16 sourdough bread slices
      16 thick applewood-smoked bacon slices, cooked
      Strawberry preserves

      Preparation
      1. Prepare Miss Mattie's Southern Pimiento Cheese as directed.
      2. Butter 1 side of each bread slice. Place 8 bread slices, buttered sides down, on a hot griddle or in a large skillet over medium heat.
      3. Spread 1/2 cup pimiento cheese over each bread slice on griddle. Top each with 2 cooked bacon slices.
