2 envelopes unflavored gelatin
2 cups cold water
1/2 cup firmly packed fresh mint leaves
1/2 cup sugar
1 cup bourbon
Garnishes: fresh mint sprigs, coarse sparkling sugar
Preparation
Sprinkle gelatin over cold water in a medium saucepan. Let stand 5 minutes. Add mint leaves and sugar. Cook over medium-high heat, stirring often, 3 to 5 minutes or until steaming. Let stand 15 minutes. Remove and discard mint leaves. Stir in bourbon. Pour mixture into a lightly greased 9- x 5-inch loaf pan. Chill 4 hours to 1 week. Cut into squares. Choose your favorite fillings, and prepare up to a day ahead. Plan on 1⁄4 cup filling for each whole sandwich.
Freeze bread slices until firm. (This makes it easier to trim and cut the sandwiches.)
Trim crusts from bread with a long serrated knife after sandwiches are filled; cut each sandwich into 4 triangles.
Make sandwiches up to 4 hours ahead. Place in an airtight container, cover loosely with wax paper and a damp paper towel, cover, and refrigerate.
Ham Salad
Process 1 lb. chopped baked ham, in batches, in a food processor until coarsely ground, stopping to scrape down sides as needed. Place ground ham in a bowl, and stir in 3 hard-cooked eggs, peeled and grated; 2⁄3 cup mayonnaise; and 1⁄2 cup finely chopped sweet-hot pickled okra. Add salt and pepper to taste. 6 yellow squash (about 1 1/4 lb.)
8 sweet mini bell peppers
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1 (16-oz.) package gnocchi*
Spinach-Herb Pesto
1/2 (5-oz.) package baby spinach
1/4 to 1/3 cup (1 to 1 1/2 oz.) freshly shredded Parmesan cheese

1. Preheat oven to 425°. Cut squash into 1-inch pieces. Cut bell peppers in half lengthwise; remove seeds. Stir together squash, bell peppers, oil, salt, and ground pepper. 1/3 cup butter, softened
16 sourdough bread slices
16 thick applewood-smoked bacon slices, cooked
