Pumpkin Recipe Favorites
This is my favorite season is fall. Here is my collection of pumpkin favorites.
Living in Florida, it's hard to visualize the change of seasons here, the temperature was 84 degrees outside, really pumpkins by the pool is just not right! Today did drop down to a 69... and we expect it to be in the 50's tonight!
Now January and today was a chilly day! I know I know, feel sorry for me, it's gorgeous here! Sweating actually! But I never forget my favorite FALL IN UPSTATE NY! Just a beautiful view, colorful fall trees, hay rides and pumpkin patches... the memories are etched in my mind forever!

Soup was the most popular use, but grandma use to also make Greens and White Beans over day old bread, another one of my Italian favorites. This soup hits the spot on a cool or blustery day up North. Wedding soup is very popular without the mixed vegetables and beans this would be it!

Italian Christmas Eve Baccala Cod with Pasta Marinara Sauce

One of the 7 Fishes on an Italian Christmas Eve, a sauced up salted Cod/Baccala!
This is was one of my Dad's favorite on Christmas Eve made with percatelli pasta, more frequently eaten with linguine.
Lightly flour then browned.
The marinara sauce will stick to the fish better and compliment the fish flavors
This is the process we used.
1- pound dry salted cod/baccala fish . This fish will have tobe soaked in water and then changed out many times in a 48 hour period and sometimes even up to 72 hours, checking and changing out the water until it is clear. If it's not clear, continue to change out water several more times during the day until the water is completely clear.
