3 tablespoons extra virgin olive oil
Beans and Pasta with Tomato Sauce ....Simply Delicious
A very easy and quick meal everyone will love, the flavors are wonderful!
3 cloves garlic, minced
1/4 teaspoon garlic powder
2 fresh basil leaves chopped
1 teaspoon dried parsley or 1 1/2 teaspoon fresh parsley
2 lbs fresh tomatoes, peeled, seeded and put through the food processor
1/2 cup white wine
2 cups cooked white beans ( I used navy beans)
salt and pepper to taste
pinch of sugar
1/4 teaspoon cayenne or red pepper flakes
1/2 pound penne pasta cooked separately al dente
grated Romano cheese for the top
Heat the oil in a skillet or saucepan over medium-high heat. Add the garlic saute till golden brown. Remove garlic. Add all spices, salt and pepper to taste, add a dash of sugar.
Add the tomatoes, reduce heat to medium and simmer for about 10 minutes.
In the meantime boil water for penne pasta, cook till al dente, set aside.

Really, no matter how old your dad gets, its still too soon when they pass away, there is never a time in your life your ever ready for this.
Dad passed at 82. He was still lifting weights at that age, playing golf, stayed in great shape and had no known illnesses. Fathers Day weekend back in 1995, I went to mom and dads house with my two small boys to take them to my brothers around 2 hours away. We had big plans for him, we were going to stay for the whole weekend. Dad and my brothers were going to play golf and spend time with the boys on Saturday. Mom, I and the boys, were going to going shopping at the nearest malls around there. Sunday we would have made him one of his favorite meals and all been together. Well that never happened. Mom and Dad weren't there waiting for me to pick him up. There was a note on the door. They had taken him by ambulance to the nearest hospital,

- Peanut is a good source of Coenzyme Q10 which protects the heart during the period of lack of oxygen example high altitudes and clogged arteries.

2 1/2 cups baked sweet potatoes peeled, boiled and mashed ( you can use canned if preferred)
1/2 cup packed light or dark brown sugar
4 large eggs
1/3 cup half and half or evaporated milk
2 tablespoons butter, melted
1 tablespoons pure vanilla extract
1 tablespoon corn syrup, preferably dark
4 tablespoon light or dark rum
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger

Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. Last 10 minutes add the cherries and marshmallows if desired.
