Talk about fresh: Farmer, foodie and blogger Andrea Bemis dreamed up these light and tasty vegetarian dishes while she was harvesting the ingredients. Grab a fork.
Meet Andrea Bemis
The farmer and blogger, 30, is new to dirt rows. "I was an aesthetician giving facials, but my husband grew up on an organic vegetable farm, and about five years ago we just decided to give that a try," she says. Today, the couple runs a 2-acre farm in Parkdale, Oregon, where they grow 50 different veggies to sell at local markets and put food on their own table. "Recipes come to me when I'm at the farm, hungry and craving what I'm picking."
