The Mediterranean diet may be more popular along the Pacific U.S. these days than it is in Italy, Greece, and Spain. According to an NPR story this week, the famous diet is losing ground in its homeland.
Dr. Angelo Pietrobelli, associate professor of pediatrics and nutrition at the University of Verona, said one reason for this is that adolescents there avoid the Mediterranean diet in order to imitate what Americans eat--burgers, fries, and soda. But the diminishing popularity of the traditional diet is also fueled by energies stronger than admiration. Natural instincts and the economy are at play. Ancel Keys, an American military physiologist, was the one to bring news of the Mediterranean diet to America from Pioppi, Italy, where, in the 1940s and 50s, he observed a population poorer, yet healthier than those of wealthier, surrounding nations. The mix was so simple, so healthy and fresh, that I found myself eating it as a side salad at lunch, a dip for chips before dinner, and a hunger-slayer at other unplanned hours. This dish moved in and uplifted my kitchen and me. Changing your grocery store habit can be as easy as adding one or two new recipes, a few new fruits and vegetables from the store, or getting comfortable with a couple new sauces.
Many of us have the tendency to buy the same foods each season, which we use to cook only the recipes we know best. This can mean trouble if you're trying to lose pounds for the swimming months of summer, if your body is craving a healthier pattern, or if your taste buds are demanding a new experience.

EatingWell's Salsa RojaThis weekend celebrity chef Rick Bayless will be headlining Celebration Weekend 2011, Sunset magazine's festival in Menlo Park, California. He'll be demonstrating recipes like Mexican-Style Shrimp Cocktail, Sundried Tomato Guacamole, and Tropical Beach Ceviche, while many of us are at home left to our jars of Pace and salsa con queso. I figured we better talk to him. If you don't know Rick or won't have a chance to be in the festival's Chase Sapphire VIP lounge, just know that he's been studying Mexican cooking in Mexico for most of his life, and he's good. So good he won the first season of Top Chef Masters (which he described as the most stressful experience of his life), as well as four James Beard awards. We were lucky enough to talk with him and get his top tip for improving our favorite Mexican dish.

As the editor of Shine Food, I have been amazed with the blog posts that have been coming in lately. They are written well, interesting, and hunger-inducing. Here's the thing: In a few cases, I have been knocked out by a stunning picture, but then not been able to feature it because the recipe is not included. This gets me all restless, because your gorgeous pictures deserve to be shared...but there are rules! In order for me to feature your post in the Editor's Picks blog roll and around the site, the recipe has to be included. Our readers have let us know many times that they get sad when a story promises a recipe that actually lives elsewhere, so our rule is at least one recipe included in every recipe post. Of course, you're more than welcome to include other links back to your own website (if you have one).
With so many great stories coming in lately from our readers, I'd like to call out a few to check out:
