    Louisiana: GUMBO

There's perhaps no dish that quite so perfectly encapsulates this state like gumbo. Although popular in other states, this is the meaty dish's hometown, and it's frequently touted as a culinary realization of the state's melting pot culture. Claiming French, Spanish, native American, and Italian influences, the stew incorporates an even wider range of ingredients: traditionally okra, poultry, shellfish, smoked pork, andouille, celery, bell pepper, and onion. Gumbo itself can be prepared in the Creole or Cajun styles-the former leaning more on French tradition, the latter more heavily spiced and redolent of rural cooking.

Down in Los Angeles, they specialize in the Breakfast burrito:

    Lobster roll.

    Maine
When one thinks of Maine, one thinks of lobster. It's no surprise, then, that Maine boasts the best lobster rolls in the country. Lobster rolls traditionally consist of a toasted hot dog bun topped by pieces of fresh lobster meat and a touch of mayo or butter and seasoning. As simple as they sound, where you can find the "best lobster roll" in Maine is a point of heated contention -- the telltale sign of a state specialty.

    Massachusetts
Joseph C. Lincoln, a Cape Cod author and playwright, once wrote: "A New England clam chowder, made as it should be, is a dish to preach about, to chant praises and sing hymns and...to fight for...It is Yankee Doodle in a kettle." Despite the countless variations of chowder (ranging from the red Manhattan chowder to California's Monterey chowder) when one thinks of the quintessential chowder, it's the creamy New
