2/3 cup couscous
3 tablespoons extra-virgin olive oil
1 pound shelled and deveined medium shrimp
1/2 teaspoon crushed red pepper
2 tablespoons unsalted butter
One 15-ounce can butter beans, rinsed and drained
2 tablespoons capers
1 1/2 tablespoons fresh lemon juice
1 tablespoon chopped parsley


DIRECTIONS
1. In a bowl, stir the couscous with 3/4 cup of boiling water. Cover with a lid and steam for 5 minutes. Fluff with a fork.
2. Meanwhile, in a nonstick skillet, heat 2 tablespoons of the oil. Add the shrimp and crushed red pepper and cook over moderately high heat until golden, 2 to 3 minutes; transfer to a plate. Add the butter to the skillet. Add the beans, capers and lemon juice and cook, stirring, for 2 minutes.

1 teaspoon garam masala
1/4 cup unsweetened coconut milk
2 tablespoons creamy peanut butter
2 tablespoons hot water
2 tablespoons chopped salted peanuts
4 round ciabatta rolls, split and toasted

DIRECTIONS

1/2 cup flour
2 eggs, lightly beaten
1 cup panko
2 tablespoons thyme, finely chopped
2 tablespoons rosemary, finely chopped
2 teaspoons sage, finely chopped
2 teaspoons basil, finely chopped
4 pork chops
salt and pepper, as needed
olive oil, as needed for pan-frying

1. Preheat the oven to 400 degrees Fahrenheit.
2. Prepare a breading station by placing the flour, eggs, and bread crumbs in three separate bowls. Season the bread crumbs with the fresh herbs.
3. Season the pork chops with salt and pepper.

Cookies 'n' CreamWe love cookies and cream ice cream so much. There is hardly a more popular ice cream in our house. The only glitch is that there is never enough and I have to keep buying more more more! I came up with this way to make simple cookies and cream ice cream at home because I needed a way to make it whenever we needed it, without having to run to the store. 1 14-ounce can sweetened condensed milk

2 teaspoons vanilla extract

2 cups heavy cream

1 dozen lightly crushed chocolate cream cookies

In a medium bowl stir the condensed milk and vanilla extract. Then, in a stand mixer fitted with the whisk attachment whip the cream until stiff peaks form. Fold the cream into the condensed milk and fold in the crushed cookies. Freeze
