10 Quick and Healthy Potato Salads

I love potato salad, but by August, I'm ready for a change from the traditional mayo-based version. Here are several ideas for both warm and cold potato salads. No matter which you choose, begin by boiling fingerlings, Yukon Golds, or small red-skinned potatoes (don't bother peeling them), and then mix in the ingredients.

Cut warm potatoes into thin slices or chunks, then..

  1. Add white balsamic vinegar, extra virgin olive oil, finely chopped shallots, and fresh mint.
  2. Mix in finely chopped hard-boiled egg, minced cornichons, Champagne vinegar, and extra virgin olive oil.
  3. Combine with homemade pesto, sliced olives, and chunks of cooked shrimp
  4. Add julienned arugula, hot crumbled bacon, and white wine vinegar.
  5. Toss with walnut oil, red wine vinegar, crumbled goat cheese, toasted walnuts, and chives.
Enjoy the end of summer with our favorite hot weather foods and drinks.

Cut cold potatoes into chunks, then...

  1. Mix with marinated artichoke hearts, fresh basil, lemon juice, and extra virgin olive oil.
  2. Add cooked string beans, pesto, and some mascarpone.
  3. Add mustard and mayonnaise, chunks of hard-boiled egg, and fresh tarragon
  4. Stir in Greek yogurt, crumbled feta cheese, cucumbers, and red onion.
  5. Toss with mayonnaise, lime juice, cilantro, minced jalapenos, and avocado

    Awesome! I hardly even use mayo anymore (when I do, I make my own) so I opt for oil and vinegar in my potato salad as well (like Italian dressing). I think Mayo is highly overrated and the healthier versions are expensive. Best to change it up a bit, and these recipes are great. Thanks!

    The only potato salad I make has potatoes, purple onion chopped, fresh chopped parsley, 2 avacados, peeled & chopped, salt & pepper to taste. Dressing is just equal parts olive oil & lemon juice. It's full of flavor and actually healthy with good fats.
