While having an avocado for breakfast this morning, I once again thought to myself, "I could eat this fruit morning, noon, and night and never grow sick of it." To me, it is truly the perfect food. Not convinced? Check out the list below and then decide whether or not you agree.
1. Drink it. Combine avocado, milk, and sugar (or agave syrup or honey), press blend, and voila, you have the perfect breakfast shake or afternoon snack.
2. I can't believe it's not butter! Toast your bread of choice (I prefer walnut-cranberry), then spread that avocado like crazy. I know what you are thinking, GENIUS!
3. Add it to a salad. But not just any salad. When combined with a nice imported tuna in olive oil and shaved fennel over a bed of baby spinach you will wonder why you had not thought of this before.
4. Healthy dinner for under 5 dollars. Combine a ripe avocado over quinoa and sprinkled it with toasted almonds. The combination of contrasting textures and flavors makes this an instant meatless favorite.
5. Make it a dressing. Combine avocado, olive oil, lemon juice, salt and pepper in a food processor and you will forget balsamic vinaigrette ever existed.
