This quick and easy mushroom snack is simple for kids to prepare on their own, not to mention fun and tasty.

Crunchy Portabella Fingers Recipe

Ingredients:
2 cups cheese or multi-grain tortilla chips, about 2 oz
1/4 cup light mayonnaise
6 oz pre-sliced fresh Portabella Mushrooms (about 10-12 slices)
salsa or ketchup (optional)  

What you need:
- Heavy plastic bag
- Large dinner plate
- Rolling pin or coffee mug or table knife
- Serving Plate
- Pastry brush (or clean artists paint brush)

How To Make it:
1.  Place chips in the plastic bag; seal or tie with twist tie and place on the counter or table.
2.  With a rolling pin or the bottom of a mug, crush the chips in the bag  to make coarse crumbs. You can even pound them with your fists!.
3.  Open the bag and pour the crumbs onto a large dinner plate; set aside.
4.  Brush or spread mayonnaise on sides of a portabella mushroom slice.
5.  Press the mushroom slice into the chips; turn over to coat both sides.
6.  Place on serving plate; repeat with remaining mushrooms.
7.  Enjoy eating them with your fingers with paper napkins or serve on small plates; dab with salsa or ketchup and eat with knife and fork.

Makes 10 –12 slices

Variations: Substitute large pre-sliced fresh white mushrooms for portabellas.

    What is going on here? Raw mushrooms coated with mayo and Doritos? I do not think I would have eaten this as a child, nor would I eat it now. Gross.

    How is chips and mayonaisse healthier than a chicken strip? And do you know ANY kid who would voluntarily snack on mushrooms?

    If you want a healthier alternative to fried chicken fingers, here's what I do:

    Take a 99% fat free chicken breast without skin, and slice it up. Dip it in a beaten egg, and coat it in a mixture of corn flake crumbs, flour, paprika, garlic powder, nutmeg, pepper, and salt. Put them on a nonstick baking sheet and bake for 25 minutes at 350.

    It may not be "quick and easy", but your kids will love them, and you'll feel good serving them.

    yea, wow. this is definitely not "healthier" in any way. Nor would any kid ever touch one with a 10 foot pole.

    That sounds disgusting. All the fat of the mayo and Doritos and none of the protein of chicken!

    i'm 24 and would NEVER munch on this so called snack. mushrooms are nasty and what a way to ruin doritos
