My friend Norma has a beautiful vegetable garden. She freely bestows extra veggies to her buddies, and recently saved a special one for me- a zucchini roughly the size and shape of two footballs put together. She had spent a long weekend away, and came back to find this monster squash lurking behind another plant.
This was a lot of zucchini, for a single zucchini. My fear was it would be bitter. So, I grated the thing up and made a curry zucchini soup and still have enough left over to make a giant chocolate zucchini bundt cake this weekend.
What are your go-to recipes for dealing with zucchini? Or, do
you just give 'em away when you've got too many?
UPDATE: Chocolate zucchini bread was a big success, which was good,
because I had enough zucchine left over to make three of
them...
