A Baked Potato, in a Bowl!

I LOVE baked potatoes. Actually, I love just about anything that involved potatoes - potato salad, french fries, potato soup, mashed potatoes... you would be hard pressed to find something involving potatoes that I don't like! So I knew I would love this recipe for baked potato soup when I found it! This actually goes above and beyond your typical baked potato. It includes other vegetables such as carrot, celery, and onion, which add a whole new dimension to the soup. It's very tasty! I chose to garnish my soup just like I would a mashed potato - with sour cream, bacon, and green onions. Not exactly the most healthy choice, but man it was good!

She originally included beer as one of the ingredients, but I don't like the taste of beer, so I omitted it. If you would like beer in your soup, then replace 1 cup of milk with 1 cup of beer, added right before serving the soup.

Ingredients

  • 2 large baking potatoes
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 8 oz yellow onion, chopped
  • 4 Tbsp butter
  • 2 cups milk
  • 2 heaping Tbsp flour
  • 1 cup Fontina cheese, finely shredded
  • salt and pepper to taste

Cooking Directions

  1. Prick potatoes with a fork and bake in the oven approximately 45 minutes.
  2. When they are soft, remove the potatoes from oven, allow them to cool slightly, remove their skins and cube the potatoes.
  3. Roughly chop the celery, onion and carrot.
  4. Saute in butter. Allow them to rest in place slightly to develop browned (but not blackened) edges.
  5. When the onions are becoming translucent, add flour and stir. Allow to cook approximately 3-5 min until the flour slightly browns.
  6. Remove from heat, add milk and stir to incorporate.
  7. When there are no visible lumps of flour, add the Fontina cheese. Stir well. Return to a moderate flame, stirring constantly to melt cheese.
  8. Blend with a hand held blender to desired smoothness. At this point, the mixture will be very thick.
  9. Garnish as desired. I garnished mine with sour cream, bacon bits, and green onions, similar to how I would garnish a baked potato.
