BBQ Meat Muffins

This is a fun recipe that is great for parties.  Make them ahead of time and reheat in the oven just before your guests arrive. They always disappear.  My husband calls it a meal in one.

BBQ Meat Muffins

2 tube packages buttermilk refrigerated biscuits

1 lbs. ground beef or turkey

1/2 cup ketchup

3 tablespoons brown sugar

1 tablespoon cider vinegar

1/2 teaspoon chili powder

1 cup shredded cheddar cheese

  1. Preheat oven to 375 degrees.
  2. Grease or spray a muffin tin.
  3. Separate biscuit dough and press into and up the sides of the muffin tin, to form a cup.
  4. Brown ground beef. Drain.
  5. In a small bowl, mix rest of ingredients, except cheese.
  6. Mix ingredients into ground beef.
  7. Fill muffin cups with meat mixture.  Sprinkle with cheese.
  8. Bake for 15-20 minutes.  Remove from pan immediately.
