Delicious: Green beans are so good for you, and also tasty

When I was a kid, I refused vegetables as if they were toxic and the mere touch of them on my lips would destroy me utterly, crumbling me into screaming dust. That is how I reacted to the carrot, the broccoli, the Brussels sprout. But not to green beans, and that is because my parents were smart, and I was kind of a dumb kid--they told me green beans were green noodles and they covered them in butter, and I could eat a whole bowl of them, thereby saving me from premature vitamin-deficient death and letting mom and dad high five each other, the way they deserved to.

Nowadays I am a grownup (ostensibly) and I eat all kinds of vegetables for pleasure, but I still carry in my heart a special love for the green noodle, which I usually prepare just the same way my parents did--a little boiling water, a lot of salt and butter. But there's a whole world full of preparations out there, and the Pioneer Woman may be the one to shake me out of my green bean rut, with her amazing-looking, very simple green bean recipe. I could maybe sit down and eat two bowls.

    I love to make mine in the oven with some lemon juice, almond slices and some cilantro... a little butter mind you and a pinch of salt. Very tasty!

    I've been making green beans this way for years.. but use olive oil rather than bacon grease. Makes my arteries happy. But.. "Pinner" has a great idea with cilantro and lemon! I will definitely give that a try! Here in the Southwest, we think cilantro tastes great on just about everything.

    Green beans are the only "green" thing that my 8yo will eat. You think God created them for that very purpose? LOL

    I like them fried.You fri it in butter and put some salt and pepper...and also some onions.
