Delicious: Winter greens

Hey, did you know that the spring and summer do not have a lock on delicious produce that is also so good for you? It is crazy, but it is also true. Now's the time when the kale comes out, the chard, the spinach, and ooo, the beets. Love the beets. Eating Well loves the beets (and the chard and the escarole and all the other winter produces) and wants you to love them too, and to that end has collected together a winter produce guide, including a passel of recipes (mmm, goat cheese) and a buying and preparation guide, too. Take that, summer. It's almost enough to make you stop missing peas in the pod.
