Who says that just because it's Thanksgiving you can't eat a juicy turkey and not have it be healthy? Thanks to Sunfare, you can!

Serving Size: 2

Ingredients
2 5 oz. turkey tenderloin (butterflied and pounded thin)

Stuffing
¼ cup preferred stuffing mix
½ oz. pine nuts
½ oz. dried cherries
¼ cup chopped onions
¼ cup chopped celery
½ cup chicken stock

Gravy
2 tbsp. Worcestershire sauce
1 cup cream of mushroom soup
Chicken stock (to adjust consistency)

Turkey preparation
In a large frying pan, add 1 tbsp. olive oil (or enough to lightly coat the bottom of the pan). Sauté onions and celery until transparent. Add pine nuts and dried cherries. Add stuffing mix. Add chicken stock, stirring until mixture is evenly moist. Remove from heat and set aside.

Roll stuffing in turkey by laying the pounded turkey down, placing the stuffing on one end and rolling until complete. Sear turkey rolls to a golden brown, then bake at 400 degrees for approximately 10-12 minutes.

Gravy preparation
Mix the mushroom soup, Worcestershire sauce, desired amount of chicken stock in a pot or deep pan. Simmer until thick, cutting with more chicken stock if necessary to achieve desired consistency.
