I love this combination of fresh asparagus and sweet potato!

FRESH ASPARAGUS AND SWEET POTATO SOUP

1 large sweet potato, peeled and cut in chunks

1 bunch fresh asparagus, woody ends removed and cut into thirds

1 medium onion, chopped 2 celery ribs, diced

2 cans chicken broth plus enough water to make 4 cups (1 quart)

3 tablespoons butter 1 tablespoon bacon grease

1/2 cup all purpose flour 1 cup heavy whipping cream 1/2 cup whole milk

Season to taste, start with: 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/4 teaspoon crushed red pepper flakes

In a large pot, combine the chopped vegetables and chicken broth; bring to a boil. Then reduce heat to simmer and cover for 10 to 15 minutes or until sweet potatoes are tender but still firm. Add butter and bacon grease.

In a small bowl, whisk together flour, whipping cream, milk and seasonings until smooth; and pour in to the pot. Bring to a boil and continue cooking and stirring until thickened. To serve, you may garnish with cooked bacon bits and cheddar cheese.
