Grilling Controversy: To Flip or Not To Flip?

Recently, I posted a blog called 7 Steps to Healthier Grilling, which contained the seemingly innocent advice to flip grilled food frequently. Based on the responses I got, you'd think I'd told people to find themselves a nice big bag, collect all the neighborhood cats, and then go drown them. So let me just take a moment to explain exactly what I meant.

Conventional grilling wisdom indeed stipulates that you should NOT flip food frequently. In fact, you should probably flip only once if possible, so you can get a nice sear on the meat and create those sexy grill marks. You're going for what's called the Maillard reaction, basically caramelization of the outside of the food.

But if you're concerned for your health, and specifically the cancer causing potential of grilling, you actually want to avoid searing or charring your food, particularly meat, since this has been linked with some cancers. Hence the recommendation to flip your food frequently to avoid any possibility of searing the outside of the meat.

As my colleague Andrew Knowlton, aka The BA Foodist, said "If you're that worried about
carcinogens, should you be grilling in the first place?" Well, yes. Everyone deserves a good burger every now and then. Just be careful how you flip it.

    Strange. I thought searing was the whole point of grilling...

    I think your colleague Andrew is right. If you're THAT worried about carcinogens, just don't grill at all.

    I'm tired of the liberal media and the so-called dangerous of eating smoked foods. I don't always know who sponsors the so-called studies and let's get real. Grilled meat, vegs, bread, etc., are not harmful, unless you listen to the doomsayers. Eat in moderation and enjoy...

    Hi Paul N,

    This doesn't have anything to do with the liberal media, whatever that is. These studies are usually sponsored by university and government grants, so I don't think there's anybody pulling any strings here, unlike some studies which are sponsored by drug companies, food companies, etc. There are some people who need to be really careful about this, and that's why this advice is useful. BUT I agree with you completely. Eat in moderation and enjoy. If everybody followed that advice, do you think we'd have the obesity problem that we're dealing with now and all the related health problems like diabetes, high blood pressure, heart disease, and, um, cancer????
