Homemade Pumpkin Bread

Homemade pumpkin bread, warm from the oven along with a cup of coffee is one of my favorite treats. This is one of my prized recipes that everyone asks for. It also makes two loaves, so you can have one now and freeze one for Thanksgiving dinner.

Pumpkin Bread

Preheat oven to 350 degrees.

You will need the following ingredients:

  • 4 eggs, beaten
  • 3 cups sugar
  • 1 cup vegetable oil
  • 1 lb. canned pumpkin
  • 3-1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice (if you don't have this - skip it)
  • 2/3 cup cold water

  1. Grease and dust with flour,  2 loaf pans.
  2. In a large bowl, using a mixer, beat  eggs, oil, and sugar until blended.
  3. Add pumpkin and mix until blended.
  4. Add dry ingredients and mix until combined.
  5. Mix in water.
  6. Pour evenly into 2 loaf pans.
  7. Bake for 1 hour.  Pumpkin bread is done when toothpick inserted in center comes out clean.
  8. Cool before slicing.

    Dear justokay,

Thank you for your good words. I'm very down right now. I can't say that I'm jumping for joy now, but I can say that I feel a bit uplifted. It is difficult for me right now. You made it a little easier for me. Thank you.

You don't have anything about yourself under your name, and I'm not very Internet savvy, so I don't know how to get to profiles (at least not with Shine or Yahoo). So I'm not sure if you are a man or a woman. But I know you are a good peson from your good words.

    Bye now.
