How Many Second Chances Does a Yucky Ingredient Get?

A lot of good eating happens when you give a dish a second chance.

Take tofu: I hate it. I find the texture and taste to be odd and artificial. Rubbery and chalky at the same time. If I am going to eat anything tofu, it needs to be fresh and delicately silky. Given the option, I usually pass on it. Recently, however, I gave it another go. I was at a Korean spot called DoSirak in Manhattan , it was few minutes past eight, and my stomach was a-rumblin'. As I waited for a friend to join me, I was served two little dishes, one with kim chi and the other with tofu. After five minutes of sitting in my chair, watching other peoples' dishes pass me by, the synapses in my brain spoke to me: "All we are saying is give tofu a chance." So I went for it. And it was amazing. 

The tofu was had been thinly sliced and was perfectly marinated in this sweet, garlicky, bright red pepper flaky sauce, not too chewy. Aside from the marinade, this tofu stood alone without any assistance from a grain or veggie. Maybe it was the tofu, maybe it was the sauce, or maybe it was the combination of the two (or maybe I was just hungry). But unknowingly, I had now narrowed down my "I will never eat this again" list down a bit.

Was it circumstantial or had my palate changed? I decided to find out by trying out a Epicurious Warm Tofu with Spicy Garlic sauce recipe that resembled what I had experienced during my born-again meeting with tofu. I ate it all. And even had seconds.

Yes, the palates they are a changin'.

    I am finding with age that most things I thought I would never eat are now delightful. Except liver. And foie gras (I think Chicago made it illegal not because of the ethical implications, but rather because it was straight nasty, lol!). So I guess I can sum it up as liver and liver derivatives...

    I have actually begun to enjoy anchovies in certain dishes (with lots of other textures), but by themselves...not so much.

    I would have to say scallops. They were too tough. Maybe it was just the batch I had.

    Chitlins! I have tried and tried, and just can't get past the smell and texture. Yuch!

    Ever since I was about 6 I can't stand the smell or taste of cherry. It reminds me of the cherry medicine that we got back in the 60's. Truly disgusting stuff.

    When I was younger Sloppy joes everyone else liked it, I gave it 3 strike (tried it three times) and it's out of here.

    I wasn't really crazy about tofu, but, I did give it another shot and switched the recipe around a little and now I love it.

    I have tried grits because various friends told me I would love them if they were prepared with...fill in the blank with all variations...and since I really will eat almost everything, I figured I would eventually hit on a way to make them edible. No way, never, ever again! So now, my beloved SO can mix ketchup in his grits or a can of fish roe and I'll make french toast and we both have happy breakfasts.

    Khaliela, have you tried Menudo??? Just cooking it made my stomach turn, nevermind the taste! I think I am going to be sick now.
