It's gluten free, dairy-free, sugar-free, and cholesterol free, which might make you think it's taste-free as well. It's not. It's like a savory miso soup-flavored condiment that's unlike anything else in your refrigerator. It's tangy and rich and not sweet like mayo. But I must warn you, a little goes a long way, and because it has such a distinct taste I would use it sparingly on my first run out. This stuff packs a punch on a turkey sandwich, so use lightly so the flavor isn't cloying and over-bearing. I loved it as a little boost on a grilled cheese sandwich, and I also use it to reinvigorate boring old grilled chicken and it turned out fabulously. Miso Mayo comes in three flavors: original, spicy red pepper, and garlic & dill. They're all delicious and versatile, but I like to keep things simple, so I like original best. If you're counting calories, you're probably going to want to use this as sparingly as you would mayo--one tablespoon has about 90 calories and 9 grams of fat--it's not exactly a diet-food. But it's added a fantastic Asian-inspired dimension to my kitchen that I didn't even know was missing, but now I don't want to do without it!
