Mrs Freeman's Squash Casserole

This recipe was given to my family by the lady that used to Babysit my sister in the 60's until I came along.  It has quickly become a family favorite. Very Tasty and easy to make.  I am not a fan of cooked squash but, this recipe changed my mind.

2 cups cooked squash
1 stick butter
2 eggs
1 tsp. salt
1/2 tsp. pepper
1 cup chopped onion
1 cup shredded cheese
1 cup evaporated milk
2 cups cracker crumbs
 
Mash cooked squash.   Add other ingredients and mix well.   Pour into greased baking dish and bake at 375 degrees for 35-40 minutes.
 
(Note:  Reserve enough cheese & crackers for topping.   I use only 1 egg, but egg substitute may be used.
Serves 8-10
