Pesto Tortellini With Scallops

I have had this recipe for years and it is a favorite of my husbands.  I use frozen vegetables for quicker preparation time.  You can use fresh if you prefer.

Pesto Tortellini With Scallops

Category: Tortellini
Serves/Makes: 2
 Ready In: < 30 minutes

Ingredients:

1 tablespoon oil
3/4 pound scallops
1 package (9 oz. size) Three Cheese Tortellini
2 cups assorted cut-up vegetables

I use a similar recipe, but use frozen shrimp or Tyson's grilled chicken strips, fresh chives, fresh mushrooms. Fast and tasty!

These days it's hard to tell the difference between a chef, a celebrity and a restaurateur. So many actors are now clad in Crocks, critiquing foie gras, sharing family flan recipes or opening Hollywood hot spots.
