Ingredients
1 cup of quinoa
2 cups of water or vegetable stock
2 tablespoons of butter or olive oil
6 - 8 sun-dried tomatoes
2 cloves of garlic, minced
2 shallots, minced
1 large jalapeno pepper, diced
1/2 cup of corn
1/2 teaspoon of ground cumin
1/2 teaspoon of ground coriander
1/4 - 1/2 teaspoon of cayenne pepper
1/2 teaspoon of sea salt
1/4 teaspoon of freshly cracked black pepper
2 - 3 tablespoons of chopped fresh parsley
2 - 3 tablespoons of Parmesan cheese (if desired)
