"LOVE OBAMA" CHOCOLATE CAKE
This cake was inspired by the new FIRST COUPLE inaugural dance to the tune of Beyonce's At Last. Michelle Obama in her immaculate white gown and President Obama in such a handsome black suit.
Cream cheese mixture:
1 package (8 oz) cream cheese, softened 1 large egg 2 tablespoon sugar
1/4 cup Hazelnut-flavored coffee creamer
Moist Chocolate Cake:
3/4 hot water 1 tablespoon Instant coffee powder
3/4 cup unsweetened cocoa powder 1/2 cup sour cream 1 tablespoon vanilla extract
1 1/4 cups all-purpose flour 1/2 tablespoon baking soda 1/2 teaspoon baking powder
2 sticks (1 cup) margarine,softened 1 1/2 cups sugar 3 large eggs
13 x 9 x 2 baking pan cooking spray wax paper
Topping (optional): store-bought sauce (your choice, caramel, chocolate, raspberry) or
canned pudding/pie filling (raspberry, cherry, apple)
Preheat oven to 350 degrees. Spray baking pan with cooking spray and you may line it with wax paper.
Prepare Cream cheese mixture. Combine softened cream cheese, 1 egg and 2 tablespoons sugar in a small bowl . Beat with electric mixer until smooth and combined. Slowly beat in coffee creamer, continue mixing until smooth. Set aside.
Prepare Chocolate Cake batter. In a small bowl, combine hot water, coffee powder and cocoa powder; stir until smooth. Add sour cream and 1 tablespoon vanilla to make a creamy chocolate mixture. Set aside.
In another small bowl, combine together flour, baking soda and baking powder.
In a large mixing bowl, cream margarine with sugar until light and fluffy. Add eggs, one at a time. Alternately add flour mixture with chocolate mixture. Pour half of cake batter into prepared pan. Drop spoons of cream cheese mixture. Repeat layers and run spatula through the cake batter and cheese mixture to make swirls.
Bake 35 to 40 minutes until toothpick inserted comes out clean
or top springs back when touched. Cool in pan in wire rack. To
serve, cut into squares and top with sauce or pudding toppings.
