Curried Apple Pork Chops

This one-skillet pork chop meal is accompanied by sweet potatoes and sugar snap peas for a tasty blend of flavor. The dish is enhanced with an apple sauce that is spiced up with the addition of curry powder. This one-skillet meal recipe is a good way to produce moist and tender pork chop.

ingredients

  • 4 boneless pork loin chops, cut 3/4 inch thick (about 1-1/2 lb.)
  • Salt and ground black pepper
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and thinly sliced (about 1-1/4 lb.)
  • 1 21-ounce can apple or peach pie filling
  • 2 teaspoons curry powder
  • 1 8-ounce package frozen sugar snap peas

directions

  1. Season pork with salt and pepper. In a 12-inch skillet brown pork, on both sides, in hot oil. Add sweet potatoes. Cover and cook over medium heat for 15 minutes.
  2. Meanwhile, combine pie filling and curry powder; spoon over sweet potatoes. Cover and cook 15 minutes more or until potatoes are nearly tender. Add sugar snap peas; cover and cook 6 to 8 minutes more or until peas are crisp-tender. Makes 4 servings.

    This isn't a very good recipe and I don't recommend anyone wasting their time on it. The cooking times listed are way off. About 20 minutes into it (not long after I added the apple pie filling), the pork and sweet potatoes were burnt. I even had the heat a little less than medium (as the recipe says) and it still burned. The pork was overdone at that point and hard to cut and eat. I'm not sure how you are supposed to cook this an additional 20 minutes from that point without setting the whole thing on fire.

    I am going to try this recipe tonight. I think with all recipies you need to keep an eye on your food because all ovens, ranges, microwaves and grills are not the same.

    I did notice the photo appears to be a pork roast and not a chop. Looks like a great fall recipe and I can't wait to try it.

    cooking times off? of course they are..the picture is of a pork roast (which takes longer to cook than chops) with fresh red & green apples (not canned) and the side is zucchini

    oops !! wasn't red peppers. only apples..didn't see any potatoes either.
