Soup is something of a meal that you might call COMPLETE. To make it so, you should be careful in choosing the right and proper ingredients to make it healthy.

Here is my presentation of what a “healthy soup” means:

 

Ingredients:

2 pcs medium sized carrots

2 pcs medium sized austalian potato

1 cup brocolli ( finely chopped)

1 cup cauliflower ( finely chopped)

3 spoonful of oatmeal

2 cups fresh milk

1 ½ teaspoon butter

 

Seasoning:

Salt

Pepper powder

Garlic( shredded)

Onion ( chopped)

 

Procedure:

In a cooking pot(non-stick), saute garlic & onion in butter til golden brown, while in a large bowl, soak the oatmeal in fresh milk. Leave for 5 minutes. While stirring the saute mixture, gradually add the vegetables one at a time. Stir occassionally. Then pour  the soaked oatmeal with milk. Let it boil, til vegetables are cooked. Salt & pepper to taste. Add water as to the desired thickness ( or thinness).

 

Note: This is a pure vegetable soup. Should you want to alter it, you may add shredded boneless chicken breast.

Nutritional Info: This food is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Dietary Fiber, Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Potassium, Copper and Manganese, and a very good source of Vitamin A.

    All I have is a microwave, a slow cooker, a coffee maker and a barbeque...........Stereotypical, textbook, garden variety bachelor pad kitchen......But hey, I'll give it shot....Copied, filed, and someday I'll let you know.....Soup is something that I can always 'Slow Cook"....Kinda soggies up the tortillas a bit.though......C.

    Nice recipe! Where the h*** do you get Australian potatoes? I live in California. How do you get them in Dubai?
