Chef Nikki Shaw: A delicious sauce is one of my
favorite things as a food lover. Every time I eat at a restaurant,
it never fails: I must order extra salad dressing and sauce. A
great sauce is the perfect "accessory" to any meal. Just
like a
beautiful matching set of jewelry, or coordinating your purse
and shoes, accessories can transform an ordinary outfit into
extraordinary!
There are a wide variety of sauces: dips, glazes, chutneys, salsas, relishes, marmalades, and many others. They can be sweet (warm chocolate fondue, caramel syrup, honey yogurt dip), savory (marinara, hollandaise, pesto) or a combination of both (honey mustard, mango salsa, raspberry vinaigrette). Take your pasta "over-the-top" with my simple Sweet Garlic Cream Sauce. Throw some sliced chicken or jumbo shrimp on top, and watch it disappear!
Sweet Garlic Cream Sauce
4 tablespoons butter
2 tablespoons fresh garlic, crushed
3 cups heavy cream
1 cup Parmesan, grated
3 tablespoons sugar
Sea salt, to taste
Cayenne pepper, to taste
1. In a medium saucepan, add
butter and garlic. Cook on medium heat for 2-3 minutes,
stirring constantly.
2. Stir in
heavy cream. When mixture begins to lightly simmer, whisk in
Parmesan. Let sauce cook on low heat for 7-9 minutes until it
thickens, stirring constantly.
3. Add sugar, then add salt and pepper to
taste (be careful when adding salt: Parmesan is naturally
salty).
Enjoy over pasta with vegetables and chicken or seafood on top. Sprinkle with Parmesan before serving.
Servings: 4-6 / Prep time: 10 minutes / Cook time: 15 minutes
"NIK TIP": Store-bought sauces are quick and convenient! However, you can "doctor" them up and make them even better. Try adding a little brown sugar to your BBQ sauce or white wine to tomato sauce.
