Sweet Potatoes

user

I signed up to bring the sweet potato dish to the Thanksgiving get together we're attending.  It's a major foodie and chef crowd, so I want to make something unique and good.  Any ideas?

Do like my great aunt, Nonnie, used to do - add colored marshmallows!

Mark Bittman has a great recipe for sweet potatoes that are shredded, stir-fried and blended with butter and sage and it looks dreamy to me. I hope this helps!

We don't like the sweet sugary sweet potatoes in our home. We mash them add butter, salt and pepper, and a secret ingredient...jalapeno sauce to taste! They are so yummy that we have them with some sunday dinner's as well!

Here's something I like to do with sweet potatoes. Sorry I don't have a recipe; I just wing it.

Parboil the sweet potatoes lightly. Drain and cool. Make a syrupy glaze with honey, brown sugar, soy sauce, finely minced garlic and finely chopped ginger. Pour glaze over potatoes and toss well. Bake at 350 degrees F for about 25 minutes or until potatoes are fully cooked. Sprinkle with toasted sesame seeds.

It's a great salty sweet combo.

Sweet potatoe cassarole, not healthy but yummy!

1 lg can (or 3 cups) cooked sweet potatoes

1/2 cup sugar (or brown sugar or Spleda for baking)

    1/2 stick butter or margarine

1/2 cup milk (the creamier you use, the creamier the dish will be)

Cinnamon, or pumpkin pie spice to tast

Once mashed and mixed over medium heat on stovetop, remove from heat and add 2 beaten eggs. Whip well.

Put in baking dish (small cassarole dish, or 9 by 13 if doubling receipe). Melt margarine (1 stick or more) in pan. Mix in brown sugar until a thick liquid. Add 2-3 tsp flour to thicken. Add pecans. Pour this over sweet potatoes and bake at 350 for 30-45 minutes. Can back longer in cooler oven. Serve warm, or cold. Can make and refrigerate before baking. The topping is a totally addictive favorite, so even when I make twice the amount of topping, some will complain there isn't enough.

I will warn you, this is as dessert as main dish, but it is great. I would pick it over any pumpkin or pecan pie.

A real simple way is to just bake whole sweet potatoes in 375 degree oven for about an hour. (Should be soft when poked with a fork.) Scoop out potatoes from the skins, and mash with butter, cinnamon, and nutmeg to taste. Quite delicious, and sweet, without all the sugar, honey, or syrup.
