The Leftover Lurch

I have had some pretty bad holiday leftover meals.  It seems as though everyone has their own special leftover recipe that only they can love.  From one family member that makes what she calls "stuff" (a crock pot filled with all of the big meal's remains, all cooked together until it is absolute mush), to a good friend who makes "leftover stew" (once again all of the holiday remainders thrown into a pot - including pecan pie - and boiled into something completely inedible and even more disgusting in appearance).  The common theme here is an inability to throw anything away, and a desire to make something new, and hopefully delicious from an honored holiday tradition.  So, armed with that same desire to create a healthy meal that utilizes the leftovers in a way that is actually tasty and edible, I came up with this:

  • Holiday Leftover Pizza

    Ingredients:
    Pizza crust
    your favorite cheese
    other assorted pizza toppings (onions, mushrooms, peppers, olives, etc.)
       
    Leftovers:
    gravy
    stuffing and/or mashed potatoes
    vegetables
    turkey
    ***(No Pecan or Pumpkin Pie, please) try to avoid sweets***

    Directions:

    Preheat oven to 350 degrees.

    Take a pre-made pizza crust and place on either a cookie sheet or pizza stone. Top this with a layer of leftover gravy for your sauce.   Add a thin layer of your favorite pizza cheese (Mozarella, or a combination of cheeses works well).  On top of that spread either leftover stuffing or mashed potatoes, then add your remaining vegetables and turkey on the top.  Other toppings can be added as desired: onions, peppers, olives, mushrooms, etc.  Top with a thick layer of cheese and bake at 350 degrees for 30-45 minutes or until warm and bubbly.

    Slice and serve when cooled slightly.  Serve with leftover cranberry sauce or salad on the side.  Pie can follow for dessert.

    Pizza is always a great hit with the kids.  This is a quick, easy meal that will utilize most of your leftovers, can freeze well, and is simple to make.  Hopefully, it will be a meal that you and your family can enjoy for years to come, without making fun of leftovers anymore.
