Use Mealy Apples in Baking

Now that it's really starting to feel like fall, I've been craving everything apple. Apple pie, apple cider, applesauce, plain apples - it all sounds perfect to me. I bought too many apples though, and many of them turned mealy. Luckily, The Kitchn has some great (and delicious) uses for mealy apples.

My favorite? To use it in baking! That way I can make all of those delicious apple dishes I've been wanting, like this one for
Spiced Apple Pancakes.
