Hi everybody! Hope you are having a great Friday so far. I thought I would give you a recipe that my husband and I are enjoying. I made 12 of these muffins, but they are disappearing fast! These little muffins are not only healthy, but they taste great too. And this recipe can be tweaked a little bit to your liking.






3/4 cup unbleached white flour
3/4 whole wheat flour
3/4 cup ground flaxseed
2/3 cup brown sugar
2 teaspoons baking powder
2 eggs
1/4 teaspoon sea salt
1 cup mashed banana
1/4 cup soy milk
1/4 cup canola oil
1/2 teaspoon vanilla

Mix together flax, flours, sugar, baking powder, and salt. Combine liquid
ingredients together in a seperate bowl. Add to flour ingredients, and mix with
electric mixer on high speed until well incorporated. Spray muffin tin with
nonstick cooking spray and fill each cup about 2/3 full. Bake at 350 degrees
until lightly brown. Makes about 12 muffins.

    My mom loves using flaxseed in anything possible. I am forwarding this recipe to her. I know she'll make some this weekend!

    Flaxseed is so vitally important and what a great way to get it.

    Do you use Soy milk for a personal reason or is it important in this recipe.

    My son is a vegan and will love these. I just copied the recipe.

    Great way to use up the flax seeds I have lying around and to have an easy breakfast. I will use cow's milk instead of soy. Thanks!

    I can't wait to try these. I am a diabetic and flaxseed is very good for me but I haven't found any way to incorporate it into my diet other than in pill form. And bananas are really good for me too! Thank you so much for sharing!

    Any way you can use oatflour instead of wheat flour? Not enough of a baker to know how this would affect the rising [if any]. Looks great!

    BTW, everyone knows one should refridgerate one's flakseeds, right? Otherwise they go bad. [if they smell like old fish, throw them away!]
