I love fish - see this week's post on tuna. Since it's Friday I'm fixin' flounder, but you can make this with any fish, even chicken if you don't like fish (gasp).

I also love whole grain sides. Never, repeat after me, never buy the plain pastas and grains anymore! There are so many good whole grain pastas that really add flavor along with the nutrients and health benefits. Sometimes the color might be a little dingy but just add some of those fresh herbs I always talk about - at the end to brighten the appearance and the flavor!

Try some of these too - couscous (like kiss kiss but with a "ooh") I add roasted vegetables to it and it makes a really pretty, really delicious or pretty - delicious dish! Quinoa, (no, it's not Kwinoa, it's Keen Wah) no matter how you pronounce it, get it and try it. Super filling, super flavorful, super fun.

2 6oz flounder fillets
drizzle with olive oil
season with 1/2 packet Good Seasons Italian or 3 TBSP. "Amazing Taste for Seafood" Spice Mix (look for it at the butcher counter)
fresh squeezed citrus
salt & pepper (always season your food)

Bake for 10 mins. at 350

For the couscous
Prepare the amount you'll be serving according to package directions
Roasted red peppers, make your own or buy them in a jar. Chop finely and add to couscous.
1/2 c. crumbled feta - add in and stir until melted and creamy
Just before serving squeeze some citrus over it to brighten the flavor
Add fresh chopped herbs - thyme & parsley go great with this

    p.s. and I love French Toast! ... but I can't find the Galloping Gourmet anymore ... last time I saw him was in either 1999 or 2000 at about 2 or 3 a.m. ... I love that show ...
