I'm  thinking the avocado is the perfect fruit.... rough and rugged exterior contrasted with a smooth, clean interior.  Fresh. Simple.   Love it.  I also love the color of the fruit (inside and out);  I guess you would call it "avocado  green".  As a  child of the 70's,  it was a trendy palette then but now.... hmm.  Well,  this hippy-chick still loves it!   I digress. 

So,  what's the origin of the name guac,  a mandatory component of any Mexican meal for me?   The Spanish word for avocado is aguacate and the Aztec molli = sauce.  (thanks Wikipedia)  I actually remember the first time i had guacamole.  It was when I was 6 years old at a restaurant called "El Cena Casa" in Benton, Arkansas,  the  home town where I  grew up.  As an adult, who has a passion for cooking and eating, I'm finding people add all kinds of culinary fluff to guac these days so in response,  i prepare my guac rugged, simple, and kick ass,   just like the avocado. Enjoy.

single serving (multiply recipe as needed)

  • 1 large Haas avocado
  • juice of 1/2 small lime
  • dash of garlic salt
  • dash of fresh lemon juice

Hollow avocado fruit into a bowl.   Mash lightly.   Add  lime juice.  Add garlic salt to taste and mix thoroughly  but maintain rough consistency.  Add dash of lemon juice over top to prevent browning in color.   Keep in mind,  limes and lemons differ in tartness and juiciness,  so assess as you mix.  (Serve as a dip with chips or crackers or use as a wrap, sandwich, or  burger garnish)

    This is a good basic recipe, but here in Texas, it must include diced onion and tomato. I also think it's better with fresh garlic and a little salt, as opposed to garlic salt. Your point about not mashing it completely smooth is very important. Guac should have creamy lumps of avocado. If all you've ever had is the pre-made green goo you find at most grocery stores, you're missing a real treat.

    yeah, i like to add cilantro, onions, tomatoes, and some jalapenos so it has more of a kick!

    I'm a guac purist too - I like mine best with just a good avocado, lots of lime juice and salt.

    Oh, and I'm from Texas (we don't all require tomato and onion!)
