I call this "Pretty Pear Soup" because it is pretty. It's also very simple to make and delicious. Let me walk you through it.

This lovely soup that I made while my husband and I watched The Office is made with pears, corn, potatoes, carrots, onion, and zucchini. Totally Fall, right?

It came to me when I noticed we had some pears in our fruit basket. Where did those come from? (My husband keeps surprising me! Read my blog  about that!) So I put them on the counter and took this picture and tried to decide what to make with them. Pie? Cobbler? Smoothies? Just eat them?

Nah, I decided to make soup instead. It's getting to be rainy and chilly here in Washington, so soups are my go-to meal to warm us up from the inside-out!

I first peeled and chopped the veggies and sauteed them in oil. Then I added the water and some mashed potato flakes to reduce the liquid. Then, while we watched The Office, the soup simmered away. After it reduced a little bit, it was time to dig in!

Here's the easy recipe; let me know what you think!

2 green pears, peeled and chopped
1 carrot, scrubbed and chopped
3 small red potatoes, scrubbed and chopped
1 cup white onion, chopped
2 cups kernels (from one ear) of corn
1 zucchini, chopped
Salt, pepper to taste
Olive oil
2 tablespoons flour
1/4 cup mashed potato flakes

Cook veggies in oil until just tender, stirring occasionally. Do not let them brown or get too tender, as they are going to have a long simmer.
Stir in flour. Add about 6-8 cups water, bring to a boil. Add potato flakes and reduce heat; cover and cook 20-25 minutes or until reduced and slightly thickened. Makes about 4 servings; my husband and I had a bowl each and there’s some left over.

This recipe can also be made with red peppers, cabbage, spinach, celery, green chiles, scallions, apples; anything you like. Basil and oregano would also be good in it. Also, if you pureed half the soup and added a little cream that would also be really yummy. But it’s amazing how this simple soup is so tasty this way! And there’s very little fuss!

    What kind of flavor does it have?? I am having a hard time getting head wrapped around the idea of pears & potatoes in a soup TOGETHER... Or even just pears in a soup?!? I'm intrigued but still a little stand-off-ish to the idea!
