User post: Pumpkin is For More Than Just Pie - Easy Cake Mix Chocolate Pumpkin Cake

Pumpkin season is here, and to me, there is nothing better than the smell of something warmly-spiced and pumpkiny (yes, that's a word -- okay, it's not, but it should be) coming from the kitchen. 

Surprisingly, chocolate and pumpkin go quite well together (think pumpkin chocolate chip bread, pumpkin chocolate chip cookies, etc.). This time, I decided to make a chocolate pumpkin cake. A cake mix makes this recipe super simple. You can glaze it with an orange juice glaze, but I like it just sprinkled with powdered sugar. Yum!

Cake Mix Chocolate Pumpkin Cake

1 18.25 oz. devil's food cake mix
1 15 oz. can pumpkin puree (not pumpkin pie mix)
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup water
1 Tbsp. pumpkin pie spice
3 large eggs
powdered sugar

Preheat oven to 350 degrees F. Grease and flour a bundt pan. With an electric mixer, beat all ingredients until well incorporated. Pour into prepared pan. Bake 35-55 minutes (it really depends so much on your oven, check at 35 minutes) until a knife inserted in the center comes out clean.

Invert pumpkin cake onto a platter and dust with powdered sugar.

    Is pumpkin puree just plain pumpkin in a can - like Libby's?

    Stephanie, Does it taste good? I imagine chocolate pumpkin to taste kinda hideous.

    I have heard that it doesn't have to be this complicated. As advised by a close friend, I will be mixing together just the box of devils food cake mix and a 14 oz can of pumpkin pie mix. She told me the result is supermoist and yummy, but not to be scared by the pre-baked mixture as it will seem very wrong, but is not and will turn out fantastic!

    The pumpkin makes the mix extra moist without adding any fat. I make my cakes this way and leave out the oil.

    I've made this before, both with chocolate and vanilla cake (I prefer the vanilla myself!). However my recipe only calls for the dry cake mix, 1/2 C of water and 1 can of pumpkin (yes justokay, like Libby's). It comes out SUPER moist and delicious!

    Hey thanks so much for the recipe! I used to bake a lot when I had roommates, but just me alone I haven't for awhile. I had read on the Libbys.com website the many uses for pureed pumpkin that I would have never thought of before. It is a good substitute for fat in a recipe, it adds fiber and you can even put it in oatmeal with cinnamon and brown sugar for a nice treat!

    Also, I love using applesauce for a fat replacement in baked goods. It always comes out really moist too.

    I'll have to try this. I have 2 boxes of cake mixes on the table-chocolate and white that I was going to make biscotti with. Maybe I'm gonna change my mind!

    As a registered dietitian, I have recommended the other version mentioned (just one can of pumpkin + one box of cake mix) numerous times. It's not only easy, it's low in fat (no oil added), cholesterol free (no eggs added) and a great source of beta carotene! Also try a box of spice cake mix + one 15 oz can of pumpkin--yum!

    Yes, pumpkin puree is just canned, unsweetened pumpkin -- not to be confused with pumpkin pie mix, which has sugar in it.

    You can just mix a 15 oz. can of pumpkin puree with a boxed cake mix -- it's a popular recipe -- but for Thanksgiving, I like to go with something a bit richer. Try it both ways, and see which you prefer.
