1 can Rosarita Refried Beans*
Lettuce
Sliced tomato
Sprouts
Cucumber
Mayo, mustard (optional)
2 slices whole grain bread
Salt, pepper
Grated carrot
On bread, thinly spread a little mayo and mustard (if using). Top with a thick layer of beans. Then sprinkle with salt and pepper. On top of that, add grated carrot, lettuce, sprouts tomato, and cucumber. Top with second slice of bread. Stick a toothpick though all the layers to hold it together.
Can also be layered on a corn tortilla that is lightly warmed in oil and eaten like a taco salad. Use cherry tomatoes, your favorite dressing or salsa, and any of a number of different veggies and additions.
So now that I've spilled the beans, what are your favorite (but unusual) food combos?

Report AbuseSo you have to try it before you say ewwwwww. It's actually very very good.
2 slices whole wheat bread
2 slices cheese (cheddar or american)
mustard
brown sugar
lettuce
Spread the mustard over one slice of bread and sprinkle with brown sugar. Add cheese and lettuce and top with second slice of bread. Slightly sweet and crunchy from the brown sugar and absolutely delicious and can be made quickly.

Have done the stone-ground mustard w/ brown sugar and hot mustard stirred in. weirdest food trick I do is to substitute cottage cheese for yogurt in my fruit smoothies - higher protein, less sugar, without the tang of yogurt, it creams up beautifully into a shake!

Report AbuseI do this with Hummus instead of refried beans and it eliminates the need for mayo. I spread the hummus on the bread like I would mayo and add my other toppings like cheese, lettuce, shredded carrots, cucumber, ect...

Report AbuseI love, love these types of sandwiches. My favorite breakfast (yeah that's the weird part is that I'll eat it for breakfast) sandwich includes some of these ingredients.
2 slices whole wheat bread (toasted), Mashed up pinto beans, and a slice of 2% cheese. Toast bread, spread hot beans over it and top with cheese and the other slice. The cheese will get nice and melty.
Super easy to make and I just reheat the beans in the microwave.
Beans were big in family, we had them with all our meals so now I'm used to having a batch made most of the times at home; which is why I say just reheat in the microwave. I'm sure canned beans work just as fine, but there's something super yummy about homemade.
