Howdy! How was everyone's weekend? Mine was fannnnn-tastic! So did you eat or do anything fun over the weekend?

Tonight I made taquitos with lentils; a simple little meal with corn tortillas, lentils, onion and garlic. My husband and I enjoyed it so much, I thought I would share it with you guys too!

Hope you like them!

Taquitos with Lentils

1/2 cup lentils
1/2 cup finely chopped onion
2 cloves garlic
1/2 cup grated carrot
1/4 cup tomato sauce
10 Corn tortillas
Cook lentils in boiling water until tender, about 10 minutes. Drain well. In hot oil, saute onion, garlic, and carrot until just tender; stir in lentils. Cook and stir about 2 minutes, or until heated evenly. Stir in tomato sauce; stir and mash until a thick consistency is reached.
Meanwhile, on a plate, layer tortillas and paper towels; spray each paper towel with water until damp; the last layer being a damp paper towel. Cook on high about 1 minute, or until tortillas are hot and limp. Take out one tortilla at a time, and fill with 1 1/2 tablespoons of filling, (keep other tortillas in microwave until ready to use) mashing down filling slightly with a spoon. Roll up tightly, pushing filling inward as you go.
Place seam-side down in a clean skillet and cook in hot oil or butter until crispy on both sides, about 10 minutes. Repeat with remaining tortillas.

A couple tips:

Don’t overfill; the tortillas will begin to tear as you roll up. But if they do tear, that’s OK; just try to keep the filling inside and place them in the skillet with the tear facing up. The filling will become “stuck” to the tortilla, ensuring that it will stay inside as you flip it over.

Also if the tortilla starts to unroll as you flip it over, gently roll it back up (don’t burn yourself!) and then hold the seam end down with a spatula for a few seconds. It should hold together after that; if not, a toothpick inserted will help keep it together.

To flip the taquitos over, use a fork and a rubber spatula; lift underneath with the spatula, and help “roll” the taquito over with the fork. But try not to pierce the tortilla so the filling doesn’t fall out!

You can also bake these; preheat the oven to 350 F and bake 6 to 8 minutes or until firm and crispy on both sides.

A few things you could add too:

Cheese, salsa, red pepper, banana or Anaheim pepper, green chiles, and you could top it with more cheese, black olives, sour cream, you name it!

Oh and you could replace the lentils with black beans or your favorite refried beans. But I made lentil tacos once so I knew Van and I would enjoy these.
