For many people, the holidays are synonymous with baking. Whether it's cookies, breads, cakes or pies, there is always something in the oven.  However, in my family, the holidays are  a time for delicious homemade candies. Fudge, caramels, bark - as long as it has copious amounts of sugar in it, my family  bustles about the kitchen running our very own Chocolaterie.

I think the reason my family loves making candy so much is because it's the perfect do-it-yourself treat. Not only does it make a great last minute gift, but it's a classic Christmas staple.

Terrific Truffles

Servings 66

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 3 cups confectioners' sugar
  • 12 ounces semisweet chocolate, chopped
  • 1-1/2 teaspoons vanilla extract
  • 3/4 cup crushed peppermint candy, flaked coconut or ground nuts

Directions
  • In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioners' sugar until smooth.
  • In a microwave, melt chocolate; stir until smooth. Add chocolate and vanilla to cream cheese mixture; beat until blended. Refrigerate for 1 hour.
  • Shape into 1-in. balls. Roll in crushed peppermint, coconut or nuts. Store in an airtight container in the refrigerator. Yield: about 5 dozen.
