What Are Your Stand-By Dinners?

What's for dinner? This is the question that occupies many of us each afternoon. But lately, I haven't had much mental energy to devote to coming up with an answer. You know the drill: Busy at work, busy personal life, not feeling creative at the end of a long day.

At times like these, I'm glad I have a roster of favorite recipes to fall back on until I start feeling more culinarily inspired. I'm a strong believer in "pinch-hitter dinners": tasty, not too complicated meals that will hit the spot while not requiring more thought or time than you have to give.

When I was growing up, my mom's rotation included breaded pork chops, pot roast with root vegetables, and chicken breasts with white wine and tarragon. Though she's an inventive and talented cook (she dabbled in Japanese and Middle Eastern cooking long before they were well known to most Americans), when faced with having to feed a picky family of four every night, she often relied on these time-tested (and delicious!) recipes.

My lighter, mostly vegetarian diet means that my standbys are a far cry from my mom's—a typical week for me might include veggie burgers, whole-wheat noodles with peanut sauce, and bean stew (in the winter) or grilled fish (in the summer). But when I cook them, I feel a connection to the classic "steak on Sunday, meatloaf on Monday" family dinners of decades past. Even in today's global world where every conceivable ingredient is at our fingertips, there's something incredibly comforting about eating familiar, predictable favorites.

    Pot roast for sure! So easy, and hot beef sandwiches the next day are great. Winter soups and stews are so filling. Just add some hearty bread for dipping and what a treat. I just made lima bean soup a couple of weeks ago. Nutricious and tasty!

    My stand by recipes are usually: fajitas. quesadillas. spaghetti. smoked sausage stir-fried with apples, onions and sweet peppers, served over cheese grits. and pasta with diced tomatoes, feta cheese, olive oil and capers.

    Really we go through phases. Our current favorites are Panang Tofu Curry, Vegetarian Korma, Spanakopita, Spinach Lasagna, Spinach quiche, and pizza.

    I keep a stash of seasoning mixes, and a ton of frozen chicken and frozen veggies. Then its just throw the chicken in the oven with a random seasoning, and steam some frozen veggies. Very little thought or effort required. And low calorie and healthy!

    Whenever I'm hungry, there's nothing better than breakfast for dinner: A stuffed omelet with a baked potato and hot chocolate. Different, but it hits the spot.

    chicken parm with tossed whole wheat angel hair pasta; baked chicken and baked potatoes (you can bake them at the same time); salmon glazed with honey and soy sauce and veggies; frozen turkey meatballs and whole wheat spaguetti; etc.

    taco's, chicken alfredo, spaghetti, hot dogs (haha) pot roast with gravy and mushrooms, mashed potatoes with gravy, green beans.. pizza, hamburgers, salad, steak, pork chops, pulled pork and barbecue sauce..MMmmm im hungry now..

    Salmon with rosemary potatoes and peas; whole grain spaghetti and meatballs, any kind of curry, spinach & cheese enchiladas; Serbian skillet pork with feta cheese and pita bread; lamb pitas with spinach, tomatoes and tsitsiki (Greek garlic yogurt sauce), pork (not ground) tacos with spinach, tomatoes and beans, spinach quiche. It helps to plan a week of meals (you don't have to make them in order) and buy what you need so you have no excuse not to cook. Also we keep a lot of spices and things like beans and rice and pasta on hand.

    Chicken Stir Fry,Chicken Broccoli,and Fajitas...those are my stanby's! LOL...ButI love cooking new things so you never know what you're gonna get in my house!

    tacos, spaghetti, fettucini, country fried steak (using cubed steak and with a low fat, low cal white gravy) and stove top meat loaf.
