    These all sound so wonderful!! Mon, Tues & Thurs. are my favs - but they are all wonderful and so easy to make! You really should try these!

    I'm a working mom, and I like to make simple healthy dinners for my husband and kids. I try to make a salmon or chicken dish at least a couple of times a week with a big salad. I buy the big chicken breasts and grill up more than I need and have the leftover chicken on a salad the next day. I have also tried to add more fiber into my families diet.
